If you do the following three things, you should be able to get your daily demand fairly easily:
1) Go to Tools> Demand Control Center
2) Right click on Demand (Base) column> Units and Formatting change the unit to something like gpd or L/day
3) Right click on Demand (Base) column> Statistics.
This will give you the total system demand in units per day.
Regarding your second question, I assume you are asking about total volume (rather than flow) and if that is correct, please right click on the interested pipe and select Totalizing Flow Meter. This will give the amount of water flown through that pipe.
